Almond Rolls
Pastry Ingredients
1 1/2 cups real butter
1/3 cup flour
2 (.25 ounce) packages dry yeast
1/2 cup warm water
1 cup scalded milk
1/4 cup sugar
1 teaspoon salt
1 egg
4 cups flour
Almond Filling

3 1/2 ounces almond paste

1/2 cup powdered sugar

1/4 cup butter or margarine

1/2 cup sliced almonds


Cream together butter and 1/3 cup flour. Pat between two sheets of wax paper to form a 12-by-6-inch rectangle. Chill in the refrigerator until firm, an hour or more.
When the butter mixture is nice and firm, combine the yeast and warm water in a bowl. In a separate bowl, combine scalded milk, sugar and salt. Cool to lukewarm and then stir in yeast mixture and egg.
Add about 4 cups flour, until you have a firm bread-like dough, and knead until glossy. Roll the dough into a 14-inch square. Put the chilled butter mixture on one side of the rolled out dough, fold the other side of the dough over the butter and seal the edges. Roll to 20-by-12-inches, taking care not to make holes in the dough. Fold in thirds, wrap in plastic wrap and chill for an hour or more.

Roll out dough again. 

For almond filling, mix almond paste, powdered sugar, and butter.  Spread Almond filling on dough.  Sprinkle filling with sliced almonds.   Roll dough into log.  Cut log into 1” sections.  Put sections on cookie sheet and cover with towel.  Let rise for 1 hour (until double in size).  Bake at 400 degrees for 8-10 minutes.  When cool, frost with powdered sugar icing (I like to flavor with a little bit of almond flavoring). 

Peppermint Martini

Two shots Godiva white chocolate liqueur, plus

Two shots vanilla vodka, and

one shot creme de methe.

Add the ice and shake.

 
Mom's candy cane cookies
Ingredients needed:

1 cup butter - softened
1 cup sugar
1 egg
1 1/2 tsp almond flavoring
1 tsp vanilla
 2 1/2 cups sifted flour
1 tsp salt
1/2 tsp red food coloring

 Heat oven to 375 degrees. Mix thoroughly the butter, sugar, egg, and flavorings. Add flour and salt. Divide dough in half. Blend  red food coloring into one half of dough. Roll 1 tsp each color
dough into strip about 4 inches long. Place strips side by side, press lightly together and twist like a rope. Place on ungreased cookie sheet. Curve top down to form handle of cane. Bake about 9
minutes or until lightly browned. Remove from oven and sprinkle with mixture consisting of 1/2 cup sugar and 1/2 tsp peppermint flavoring.

Makes about 4 dozen cookies.
 

Grandma Ryan's Donuts

This first recipe was written by hand in pencil on a loose paper. 

Donuts Rich

Butter size of egg

2 Cu. Sugar

3 eggs

4 ˝ cu. Flour or more

1 tsp. Baking powder

1 tsp. soda

1 tsp. vanilla

There were no directions given.  I do remember watching Grandma cut out the donut hole with the top of a ketchup bottle.  I vaguely remember Mom telling me that she cut the doughnuts with a drinking glass.

 

Ham Fried Rice. 
 Keep in mind I learned to cook from Mom and my measurements may not  be exact.

  1 egg
  2 tbls
  1/2 cup celery
  1/2 cup onion
   celery salt
   accent
   4 cups cooked rice
   1/2 cup soy sauce
   1 cup ham
   1 can bean sprouts
 
Heat oil in wok (Ann - a frying pan will work).   Add egg and whisk into oil.  Add celery, onion, 1/2 tsp celery salt,  and 1/4 tsp Accent.  When vegetables are tender, add cooked rice,  soy sauce, and ham.  Cook about 10 minutes.  Add bean sprouts and  cook for a couple more minutes.  Enjoy!
 

Not your Mama’s Meatloaf
2 tablespoons olive oil
1 ˝ cups finely chopped onion
1 cup finely diced green onion
"Pinch plus 2 teaspoons" kosher salt
"Pinch plus 2 teaspoons" black pepper
I heaping tablespoon minced garlic
3/4 pound bulk sweet Italian sausage
1 ˝ pound ground beef
5 slices soft bread
1 1/4 cups Dinosaur BBQ Sauce (website to order or use substitute sauce :   http://www.dinosaurbarbque.com/     )
2 teaspoons powder
1 teaspoon ground cumin
1/8 teaspoon cayenne pepper
2 eggs, slightly beaten
Preheat the oven to 350 degrees
Swirl the olive oil in a hot skillet. Add onions, peppers and a pinch each of salt and pepper; sauté till soft.
Crumble the ground beef and sausage in a large bowl. Add cooked onions and peppers.
Wet the bread under cold water, squeeze like a sponge; chop It fine and add to the bowl. Add 3/4 cup of the BBQ sauce, and the remaining ingredients. Mix well.
Press mixture into a large enough pan, slather with remaining sauce. bake 350 degrees for I 1/2 hours.    Remove from oven and let stand 20 minutes.
This serves 6 8 people. To double, cook all the onions & peppers together, but use 2 large bowls to mix ingredients.
